Here are two easy and delicious recipes to make without a scale or oven!

Cooking without a scale … and without an oven! –

Is it possible to cook without weighing anything, without an oven and only with a pan? This is the challenge that Raphael Haumont has taken up. On the program: focaccia and curd cake.

To keep the proportions of the recipe, use a yogurt pot or a small glass, but always the same!

Ingredients and recipe for yogurt focaccia

You will need:

  • 1 pot of natural yogurt.
  • 2 jars (round) flour.
  • 1/2 pot of yogurt with olive oil.
  • 1/2 teaspoon baking powder.
  • 1 small piece of fresh baker’s yeast (about 10 grams).
  • 1 large pinch of salt.
  • Herbs of your choice (rosemary, thyme), olives… (optional).

In a salad bowl, pour yogurt. Wash the jar and wipe it dry to recover the container. Then pour the ingredients in order.

For a quick recipe, with flavor and a well-aerated dough, simply add baker’s yeast to flavor the bread. These yeasts contain microorganisms that use the sugar (or starch) and convert it into carbon dioxide, thus transforming the dough into small bubbles and thus into bread crumbs.

This is the secret of bread, brioches, etc. You have to give these mushrooms time to work. It’s also sour and gives pizza dough that famously good flavor. Also add baking powder which creates carbon dioxide very quickly.

How to knead the dough properly?

Continue the recipe by kneading your dough, you will notice a change in texture.

By kneading, you hydrate the gluten in the flour, you texturize it. Molecules align and gradually form elasticity. You will have an elastic bread dough. At home, feel free to use a robot with a dough hook.

You can oil your hands to help, and then make small patties about the size of your pan. At this point you can already add a portion of herbs or spices of your choice.

Express cooking in one pan

This recipe may sound unusual, but cooking in a pan (on fire) was one of the first methods of cooking, before the appearance of the oven. The heat provided by the fire is transferred through the metal of the pan.

The edges will cook quickly. So it is important to choose a pan with a thick base that will help the heat spread more slowly. This is why you need to cook on very low heat. A lid is required initially to aid convection and retain moisture, so soft.

The pan and lid replace the oven in which the preparation is stewed. You cook for 5 minutes on each side, turn and see if it is cooked enough. It should always be covered to keep it soft.

Curd cake ingredients and recipe

In the same spirit, you can make yogurt cake with apples for example. You need:

  • 1 pot of natural yogurt.
  • 2 pots of flour.
  • 1 pot of sugar.
  • 2 eggs.
  • 1 packet of dry yeast.
  • ½ pot of oil.

Here are the different steps of the recipe:

  1. Cook the apples in the sugar-butter mixture.
  2. Caramelize gently.
  3. Prepare the cake batter on the side.
  4. Pour this mixture gently over the apples, cover.
  5. Leave to cook gently for 10 minutes.
  6. Flip carefully to finish cooking, 2-3 minutes on the other side and it’s ready.
